Loaded Cauliflower Bake
Similar to classic macaroni cheese, this recipe is a bit lighter, and it contains bacon. Everything tastes better with bacon!
Ingredients
2 small cauliflower cut into florets3 cloves minced garlic
6 slices cooked, crumbled bacon
2tbsp butter
3tbsp all-purpose flour
50g softened cream cheese
2 cups whole milk
Salt and freshly ground pepper
11/2 cups grated cheddar cheese
Instructions
- Preheat oven to 170°C. Blanch cauliflower for 3 minutes in a large saucepan of boiling water. Drain thoroughly.
- To make the cheese sauce, heat a large skillet and melt the butter. Add the garlic and cook for a minute before adding the flour, stirring to combine. Add the milk then bring to a gentle simmer before adding the cream cheese. Whisk thoroughly, remove from heat and stir in 1 cup of Cheddar. Season to taste.
- In a 20 x 32 cm dish, add the cauliflower and pour over the cheese sauce. Stir to mix before stirring in all but 1 tablespoon of green onions and cooked bacon. Top with remaining Cheddar, green onions and bacon.
- Cook for 30 minutes until cauliflower is tender and cheese is bubbling, melting and delicious.
